She Bangs, She Bangs: Cauliflower Tacos

Ingredients:

1 head of cauliflower, chopped into florets

1/2 C flour

1/2 C club soda

1/2 tsp black pepper

1/2 tsp seasoning salt

pinch of paprika

1/2 C mayonnaise (we are a Hellman's Household)

1 tbsp chili garlic sauce

4 tbsp sweet chili sauce

2 C lettuce, chopped into small strips

1/2 C cabbage, shredded (red looks prettier)

1/2 C carrot, shredded

1 bunch cilantro, chopped

1 lime

*jalapeno, sliced thinly

*1/4 C red onion, sliced thinly

8-12 small tortillas (I prefer corn tortillas)

oil for frying


* optional additional toppings


Instructions:

1. Mix together lettuce, cabbage, carrots and cilantro in medium size bowl. Squeeze lime juice over greens and set aside.

2. Mix together chili garlic sauce, sweet chili sauce and mayonnaise in small bowl to make the bang bang sauce. I don't know why it's called that but it's delicious and easy to remember.

3. Mix flour, black pepper, salt, and paprika in large bowl. Add club soda and mix. Batter should be thin pancake batter texture with lots of bubbles.

4. Heat up 1/2" oil in a large saucepan to high/medium high (if you have a thermometre, aim for oil to hit between 300-325F before frying)

5. Toss cauliflower in batter mix. Batter should lightly and evenly coat the cauliflower pieces.

6. Fry in oil a few at a time. DO NOT CROWD FRYING PAN. Fry until the cauliflower is light golden (usually 4-5min with one or two turns while cooking). When cooked properly the cauliflower should be a little soft with a light crunchy exterior.

7. Serve tacos with a generous smear of bang bang sauce, lettuce mix, fried cauliflower, and any other toppings of your choice. Add more sauce. Realize that the reason this recipe makes such a big batch of bang bang sauce because you suddenly want to put it on EVERYTHING. Realize that I am an omniscient genius.
