Turkey Fajitas

Ingredients:

1 tbsp garlic, diced

1 C onion, sliced thin

2 C mushrooms, sliced thin

3 large coloured bell peppers, sliced thinly

2 C turkey, cut into thin strips

8-12 small or 4-6 large soft tortilla shells


Other toppings:

Shredded cheese

Sour cream

Lettuce, sliced

Avocado, sliced

Jalapenos, sliced

Green onions, diced

Salsa

Cilantro


Taco Seasoning* (mix ahead of time. Better yet, make a big batch of this to keep in jar like I do and enjoy anytime your taco loving heart desires.):

1 tbsp chili powder

1 tsp paprika

2 tsp cumin

.5 tsp onion powder

.5 tsp oregano

.5 tsp salt

.25 tsp garlic powder

.25tsp red pepper flakes

1tsp black pepper


*this makes more seasoning than you will probably need. Adjust level of spice based on your own preference. If you have a package mix you like, then use that. Otherwise, as with most seasoning, start with less and taste test as you're cooking! It's one of the best perks of doing the cooking.


Instructions:

1. Fry onions and garlic in 1 tbsp oil in frying pan on medium high for 2-3min. Add mushrooms and 1 tsp of taco seasoning. Let fry another 4-5min until onions are golden and mushrooms are soft. Remove to bowl.

**If you are not fussy about separating your ingredients then you can fry the bell peppers and mushrooms at the same time. Increase taco seasoning to 1 tbsp.

If you like your sides separate, then fry bell peppers in 1 tbsp oil on medium high in same frying pan for 3-4min until softened. Add 2 tsp of seasoning and cook another 4-5min for flavours to incorporate. Remove to separate bowl.


2. Melt 2 tbsp butter in same frying pan that you have used for the vegetables. Add 1-2 tsp taco seasoning and let cook for 1min until fragrant. Add in chopped turkey, mix well and turn off heat. Cover frying pan with lid and let warm using residual heat.

3. Assemble wrap and enjoy!
