Easy Fried Udon

Ingredients:

1 tbsp garlic, diced

.5 tsp ginger, minced

2 tbsp green onion, including whites of green onion - chopped

2 tbsp cooking oil

3 tbsp soy sauce

1 tbsp chili garlic sauce (adjust to 1 tsp if you prefer your noodles mild)

2 tbsp hoisin sauce

1 large onion, sliced into thin strips

2 C bell peppers, any colours, quartered and chopped into short strips

2 C mushrooms, sliced

1 C cabbage, thin short slices

1 C carrots, sliced into thin stips

1.2kg frozen udon noodles, thawed in cool water and cut in half


*Optional protein additions: 1 block extra-firm tofu OR .5lb pork tenderloin, sliced thinly OR 0.5lb chicken thigh, sliced thinly


Instructions:

- Using a large thick bottom pot, heat 2 tbsp oil on medium-high. Add green onion whites, garlic, minced ginger, and cook for 2min or until fragrant.

- *If you are adding a meat protein, add it at this point. Cook for 2-3min, stirring often until meat is just cooked on the outside.

- Add in onions, and mushrooms and cook another 2-3min until onions softened.

- Add in cabbage, bell peppers and cook another 2-3min.

- **If you are adding tofu, add it at this step. Add in soy sauce, chili garlic sauce, hoisin and stir well. Reduce heat to medium heat.

- Add in udon noodles and cook for 5-7min, stirring often, until vegetables have reached your desired firmness. Adjust for taste as needed. Top with rest of green onions prior to serving.
