Curried Turkey Salad Sandwich

Feeds: 2-4


Ingredients:

2 C cooked turkey, chopped

.5 C onions, chopped fine

.5 C celery, chopped fine

.5 C apple*, chopped fine

1 green onion, sliced thinly

1.5 tsp curry powder

.5 tsp coriander powder

.5 tsp ground pepper

1 tsp mustard

.25 C mayonnaise (bump this up to 1/3 C if you like your sandwiches super creamy like my husband)


*I find that tarter apples work best - something like a McIntosh or Granny Smith


Instructions:

1. Heat up olive oil in a small frying pan on medium high heat and add chopped onions. Let cook 3-4min until onions have started turning translucent.

2. Add dry spices, mix well and let cook for another minute or so.

3. Turn off heat and stir in turkey, mayonnaise and all remaining ingredients. Adjust salt and pepper to taste.

4. Serve on bread, in a lettuce wrap or tortilla, or heck, even straight off the spoon. Dress with thinly sliced red cabbage, a few layers of leafy romaine lettuce or sprouts for added crunch!
