Open Sesame: Salmon on Soba

Ingredients:

4 pcs salmon fillets

soba noodles (enough for 4 servings)

1 bunch spinach, stems trimmed

.25 C soy sauce

1 tbsp fresh lemon juice

2 tbsp minced fresh ginger

1 tsp garlic, minced

.25 C sesame seeds

2 tbsp butter

2 teaspoons sesame oil

3 green onions, chopped


Instructions: 1. Mix soy sauce, lemon juice and 1 tbsp of ginger and pour a few spoonfuls onto the salmon fillets in a shallow plate to marinade. Set aside.

2. Bring a large pot of salted water to boil. Add soba noodles and cook until noodles are al dente (3-5min). Remove noodles, run under cold water for 2-3s to cool and toss with sesame oil.

3. Poach spinach until wilted in the water you just boiled the soba in (approx. 2-3min). 4. Heat up a large frying pan on medium high and melt butter. Coat both sides of salmon in sesame seeds and fry until fish is just cooked through (approx 5min on each side.) 5. Mix the soba noodles, spinach, scallions, the remaining 1 tbsp of ginger to combine. Adjust saltiness by adding more soy sauce as needed. Transfer the soba noodle to serving bowls, top with the salmon fillet and serve warm.
