Feeds: 4-6
Ingredients:
1 tbsp olive oil
1 onion, chopped finely
1 tbsp garlic, diced
1 tsp chili powder (more to taste)
.5 tsp cumin
.5 tsp oregano
1 tbsp dried parsley
4 C turkey stock
1 can tomato soup
1 (14oz) can diced tomatoes
1 (14oz) can black beans
1/2 C salsa
*1-2 C leftover turkey, chopped into small cubes or shredded
2 C frozen corn
1/2 C sour cream
1/4 C cilantro, chopped
salt &pepper, to taste
*IF for some reason you don't like turkey, or maybe you have half a roast chicken that you want to use up instead, DO IT. Use shredded chicken and chicken stock instead. It'll still taste delicious.
Instructions:
1. Fry onion and garlic in olive oil on medium high until onions are translucent and slightly golden (3-4min)
2. Add all spices and cook for 1min.
3. Add stock, tomato soup, diced tomatoes, salsa, turkey, corn, black beans, sour cream and cilantro. Bring to a boil then reduce to simmer for 20-30min.
4. Serve topped with shredded cheese, more sour cream, cilantro, tortilla chips and hot sauce. Turkey leftovers never tasted so good!
