It's a Mean Meatball

Ingredients:

1/2 lb ground beef

1/2 lb ground pork*

1 onion, diced finely

2-3 cloves garlic, minced]

1 tbsp olive oil

2 eggs

1 C breadcrumbs

1 C grated parmesean cheese

1/2 C water or stock

pinch crushed red pepper

1/2 tsp italian seasoning

salt and pepper, to taste


*you could be depressingly healthy and only use extra lean ground meat in this but that would make me sad and someone's nonna roll over in their grave. Live a little. Use the regular stuff. Cheaper and tastier. Worried about fat intake/cholesterol? Don't eat 8 meatballs, eat 3 instead. You're welcome.


Instructions:

1. Heat frying pan on medium high heat and add olive oil. Saute onions and garlic for 5-7m until onions are transluscent.

2. Add italian seasoning and red pepper and cook 1m extra. Turn off heat and let cool in pan.

3. Pre-heat oven to 350F

3. Mix together ground meat, bread crumbs, eggs, parmesean with until well blended. This is best done with your hands. It'll feel squishy and cold. Enjoy that.

4. Add in onion mixture and water and give a few good squishes to blend.

5. Roll into equal size balls (I like them the size of golf balls)

6. Pan fry the balls in a large frying pan with a little olive oil until just browned.

7. Transfer to baking sheet and bake until cooked through (about 20min). Obviously check after 15min in case your balls are small or your oven runs hotter than mine. Add more time as needed. For godsake don't bake them until they are hard because no one likes dried out meatballs. The meatballs should have a little bounce to them when you squeeze it.

8. Use in spaghetti sauce for a kid friendly pasta, on sandwiches with sauce and lots of cheese, to eat in the bathroom with the door locked and your kids crying on the other side. Life happens, make meatballs. I won't judge.
