20 Minute Mango Sticky Rice

Feeds: 4-6


Ingredients:

1 C sticky rice, dry

1.25 C water

.5 tsp salt

2.5 tbsp sugar

1 C coconut milk

1 ataulfo mango, cut into chunks or slices

1 tsp sesame seeds


* make sure the coconut milk contains at least 15% fat. Aroy-D makes a coconut milk that is excellent for dessert dishes like this one


Instructions:

1. Soak sticky rice in warm water for 10-15min, then drain.

2. Put rice in glass bowl with 1.25 C water.

3. Cover bowl with a plate and cook rice on regular high heat in microwave for 3min. Stir and cook for another 3m. Check to see if rice is cooked. Rice should be soft but not disintegrating. If rice is still crunchy in middle, replace plate and cook for 90s at a time until fully cooked.

4. While rice is cooking, heat up coconut milk in small sauce pan with sugar and salt. Do NOT let coconut milk come to full boil.

5. Pour 2/3rds of hot coconut milk mixture onto rice when cooked and still hot. Stir gently. Let sit for 5-10min.

6. Serve topped with mango, sesame seeds, and remaining coconut sauce.
