Nuts are made of 'Sugar + Spice'

Makes: 6C mixed nuts


Ingredients

2C whole roasted unsalted almonds

2C roasted unsalted pecan halves

2C roasted unsalted walnuts, halves

1/3C brown sugar

2/3C white sugar

.25 tsp hot chili/cayenne powder

.25 tsp paprika

1 tsp cinnamon

1.5 tsp salt (feel free to reduce this to 1tsp if you are watching your sodium intake)

2 large egg whites (at room temperature), beaten until white and frothy

2 tbsp water


Instructions

- Preheat oven to 300F

- Mix sugar + spices in a small bowl until well blended

- Beat egg whites in a bowl until white/frothy. Add to nuts and toss a few times to cover nuts evenly.

- Add sugar + spices mix to nuts gradually until evenly coated

- Spread out nut mixture onto baking sheet (I like to bake them on silicone sheets or parchment paper) and bake for 20-30min. Nuts will develop "puffy" appearance while baking, this is normal, and delicious.

- Remove from oven and let cool on counter on baking sheet. While it is SUPER tempting to snack on these immediately, I would recommend letting them cool for at least 10-15min before you touch them as hot sugar can burn!

- Once they are fully cooled, these can be stored in a airtight container for a few months though we have NEVER had these last longer than a week.
